
Happy Year of the Snake! 🐍 We are celebrating by making a sticky rice and sweet bean cake on the 3rd episode of Cooking with Alice! This is an EASY recipe from Alice’s mother-in-law. She gets requests for it for all sorts of occasions.
INGREDIENTS
4 large eggs
Avocado oil – 1/2 cup
Milk – 2 cups
Sugar – 1 cup
Baking powder – 1 1/2 tsp
1 box (1 lb) sweet rice powder
Red bean paste – 1/2 can
White sesame seeds
PROCEDURE
Pre-heat oven to 350 degrees
Grease a 9×13 baking dish with butter
Mix the first 6 ingredients well using an electric mixer
Pour 1/2 of the batter into the greased baking dish
Use a spoon to drop 1/2 to 3/4 of the can of red bean paste on top of the cake mixture in small dollops
Pour the remaining 1/2 of the batter on top of the red bean paste
Spread white sesame seeds on top of the cake mixture
Bake for about 45 minutes (less for a soft fluffy cake, more for a crispy browned cake)
Cut into ~24 small pieces before serving
